貝果中間有個圓洞,主要目的是增加受熱的表面積,以增加麵糰與水的接觸面積。如此一來,留有圓洞的貝果自然熟的更快,而且也可以增加我們喜愛的堅韌外皮麵積,一舉兩得呢🥰

From The Bagel Bakery, the bagel dough can be incredibly thick, it is difficult to know whether the center was cooked completely if the hole was not there.
The real reason is the hole in the middle makes it have larger surface area to be cooked all the way through. Therefore,
it will be easier to cook completely. It also allows even more chewy crust area that we are all addicted to 🥰
